An Introduction to Sushi There are three types of sushi available at the Mt. Adams Fish House. Nigiri-sushi - simply called "sushi" by many Americans - is made with a small rice ball, a dab of Wasabi, and a cut of fish placed on top. It is served two pieces to an order. The most common nigiri-sushi is tuna, shrimp, salmon, and yellowtail. The second type of sushi is nori-maki, which in Japanese means "rolled with seaweed." This process is done in two ways. The traditional way is to place a flat sheet of seaweed paper on a cutting-board. Then rice is evenly spread across the entire sheet of seaweed paper. After that, the fish and other ingredients are placed in the center. Finally the entire product is hand-rolled using a bamboo roller - called maki-su in Japanese - with the finished product having the seaweed paper on the outside. The other type of nori-maki, called the inside-out roll, is more common in the United States. This roll is made the same as the traditional roll, but has rice and other ingredients on the outside of the roll. Some of the more popular inside-out rolls at the Mt. Adams Fish House are the Alaskan Roll, the Baltimore Roll, the Rainbow Roll, and the Spider Roll. The final type of sushi is called sashimi. Sashimi is a finely cut piece of fish served alone.
